The Tuber Melanosporum is also called the 'Perigord truffle', 'Black Truffle', 'Tricastin Truffle' or Black Diamond. It is, quite simply, the best truffle: the most sought-after, the most perfumed, the most beautiful and the most expensive. It is collected between mid-November and mid-March – the truffle being at its ideal maturity in January. Coloured black, it is rounded and lightly embossed. Its skin is purplish-black, with fine white veins.

Both smooth and crunchy in the mouth, it has a spicy taste which resembles fresh ginger or black radish. The palate also quickly detects a hazelnut flavour which then gives way to a taste of humus.
