Natural, without preservative, without additive, without coulouring agent, Bottarga is only salted and can be kept for 6 months at an ambient temperature, or in the cool between 4 – 6°C.

Bottarga can either be kept for 6 months in a dry place and in an ambient temperature or in a fridge. After being kept for 15 – 20 days at an ambient temperature, product colouration can occur: this has no effect on the product's taste or quality.
