- 30cl whipping cream
- 1 very ripe avocado
- Salt and ground pepper

The recipe 
It is often rightly said that caviar is perfect on its own. Nevertheless, some simple tastes combine to make it truly sublime. That’s certainly the case with this recipe, bringing together several ingredients which complement each other perfectly.
Peel the avocado. Then put the flesh in the mixer until it becomes a smooth paste.
Whip the cream in a salad bowl until light and fluffy. Gently fold in the avocado and season lightly.
Add a spoonful of caviar to complete the dish.
