The white sturgeon (Acipencer transmontanus) migrates between the great rivers of the American west coast and the Pacific Ocean. Its caviar tastes similar to Beluga. Following the introduction of measures under the CITES Convention, the fish is farmed in California and in Italy, near Venice.
