Caviar Sevruga
Sevruga is from the smallest, but most lustrous, of the wild sturgeons (Acipenser Stellatus). This exceptional caviar has particularly subtle flavours. Coloured grey, with light or dark shades, its medium-sized grains are bewitching. The Convention on International Trade in Endangered Species of Wild Fauna and Flora (CITES) strictly controls export quotas as a result of the regrettable overfishing and poaching which have critically damaged the reproduction of wild species. This explains why CAVIAR PASSION, strictly applying current regulations and in accordance with its ethical principles, no longer supplies Sevruga caviar from either Iran or the Caspian Sea.
