CAVIAR PASSION has an offer of American caviars . The AMERICAN SELECTION caviar comes from the roe of the Paddlefish (Polyodon spathula), a native of the Mississippi and its tributaries. It is a close relative of the sturgeon and shares a number of genetic similarities. In addition we have our BOWFIN SELECTION part of the Amiidae family, the grains are medium-sized, black and rather sweet, and are similar to Sevruga caviar in size and texture.
