Caviar from France is often called “Aquitaine caviar” because Baeri comes from the Gironde area. This caviar (from the Baeri sturgeon, Acipenser baerii), originates in Siberian waters. The colour of the grains of this medium-sized fish varies from brown to black, while its adaptability make it the most widely farmed sturgeon.
