Baeri
The Siberian sturgeon (Acipenser Baerii) – better known under the name Baeri – is a native of the Siberian rivers. Its medium-sized grains are almost black in colour. Its capacity to adapt has made it the most extensively farmed species of sturgeon. Now a native of Germany and Italy - in France it is called Gironde, or Aquitaine, caviar.
