- 100g of caviar
- 24 oysters
- 400g potatoes
- 200g leeks
- 1 litre chicken stock
- butter

The recipe 
Wash and clean the leeks carefully, then slice them thinly. Fry gently for 10 minutes in a heavy-based pot.
Peel and dice the potatoes. Add them to the leeks in the pot. Add the stock and simmer for 10 to 15 minutes.
While the potatoes and leeks are cooking, shuck the oysters and add the oyster juice to the pot. Remove the oysters from their shells and spread them on the plates. Mix the leeks and potatoes well and serve.
Spread small spoonfuls of caviar over the oysters.
For this dish, with its hint of the Atlantic Ocean, a Baeri caviar would be the perfect ingredient.
