Ingredients for 4 persons
- 1 tin (50g) caviar
- 100g unsmoked diced bacon
- 500g fresh tagliatelli
- 50g parmesan
- 25cl crème fraîche
- 20g butter
- Olive oil
- Salt and pepper

The recipe 
As is often the case in Italy, begin this recipe by bringing a casserole of salted water to the boil.
While waiting for the water to boil, fry the bacon gently in a large pan. When beginning to brown, take off the heat and add the cream, pepper, butter and freshly grated parmesan. Put back on a low heat (the cream must not boil).
Cook the tagliatelle until al dente. (The sauce must wait for the pasta – never the other way round.) Drain the pasta well and serve. Top with the sauce. To finish, add one spoonful of caviar for each plate.
