- 8 scallops
- 50g caviar
- 1 tablespoon of olive oil
- Saffron
- Salt
- Pepper
- 2 endives
- Cider vinegar

The recipe 
Cut each scallop into four thin slices. Mix the oil, saffron, pepper and salt in a bowl and pour over the scallops to cover them.
Prepare an endive salad to accompany the scallops. Cut up the endives, and season with a cider vinaigrette (cider vinegar, olive oil and salt).
Place the scallops on the bed of endives and sprinkle with caviar before serving.
