The caviar of the white sturgeon (Acipencer transmontanus) has a texture and taste similar to both Beluga and Ossetra. In the wild, the white sturgeon is found between the great rivers of the American west coast and the Pacific Ocean, near San FranciscoBay and Vancouver. The fish can grow to an enormous size and weight. A species now protected by the CITES Convention, it is farmed in California, and near Venice in Italy.
